Flat Meat Fry

In The Mandalorian and Grogu film, there’s a food pod where Martin Scorsese’s character serves up sandwiches, and just knowing it was a Jon Favreau film, I figured he brought in Roy Choi to help. Roy was the culinary advisor for another Favreau film, Chef, one of my absolute favorites.

Sure enough, in the end credits, he was listed as a culinary advisor. The pair put up a video about making this sandwich that felt like a special episode of The Chef Show.

All of this to say that today, we cooked up our own with pan-fried Spam, a queso hollandaise sauce, and fried blue onions. It was pretty great! If you can’t find naturally-occurring blue onions, your best bet is mixing them with food coloring.

Jon and Roy don’t really explain how to make the sauce, but based on the description “kind of like a queso hollandaise,” I first whisked up a hollandaise with butter, lemon juice, and egg yolk, then melted some processed cheese into it to get the color, consistency, and taste I thought made sense.

This is actually the first time I have ever eaten Spam! I think Spam has an undeserving bad reputation. I could see myself making this again, maybe without the food coloring. Not because it looks gross, but just because it adds time.
